Breakfast Bites – Cranberry Lemon Bliss

Simple breakfasts and snacks. That’s what keeps me going throughout the day. And beer at night, but that’s a completely different story. Anyhow! Lately I’ve been eating the Two Mom’s in the Raw nut bars from Starbucks but they’re so expensive. I can’t keep a habit like this for long so I decided to find an alternative. The above is my solution. Presenting: Cranberry Lemon Bliss Bites. Four ingredients, they’re cheap even when it’s all organic, and they keep me plenty full for the long haul. I was so excited to share this one and hope you enjoy them as much as I do. :)

 

Cranberry Lemon Bliss Bites

• 3/4 cup pitted dates
• 1/4 cup dried cranberries
• 1/2 cup raw cashews
• 1/2 cup raw almonds
• the juice of half one lemon (more if you’re like me**)

1. Blend fruit and nuts in a blender
2. When crumbley add lemon juice and blend a touch more if needed
3. Form into balls or bars and place on parchment paper
4. Freeze or refrigerate for at least one hour

** I used the juice of one whole lemon. Some of the people that tried them liked it, some said they wished there was a little less. I leave the choice to you.

Meatless Monday – As simple as Mac and Chreese!

There’s something super simple about boxed macaroni and cheese, you know? One thing going vegan has meant is that I am now constantly checking labels and coming up with dairy products ranging from milk powder, whey, butterfat, etc. Sometimes it’s overwhelming and frustrating, to be honest. American companies put milk stuff in absolutely everything. Sometimes I just want a simple dinner out of a box. Fortunately, as the vegetarian/vegan movement gets bigger, as awareness of what we’re putting into our bodies and the consequences those choices are having, there are more and more readily available options.

This box of macaroni and “chreese” was something I had been meaning to try for a while. I have a childish love of boxed mac. It was something I did not get a lot as a child so when I got out on my own I got excited about finally having the option! Getting it “back” since I quit cheese was just as exciting as the days I knew I could make it any time I wanted (in my dorm room microwave of course!).

That said- I like to spice up my food. So here is one simple way to make something as easy and inexpensive as boxed mac into a dinner worth having! It may not be the healthiest, it may not be something I should have every night, but ladies and gentlemen, sometimes you need something that’s just a little bad.

Boxed Mac and Chreese, a surprising delicious dinner

Serves 2- and calories should not be counted ;)

what you’ll need

° 1 box of mac and “chreese” (and everything the box calls for, i.e. milk, butter, etc.)
° 1/4 tsp paprika
° 1/4 tsp cayenne
° 1/4 tsp mustard seeds
° 1/4 lb trimmed asparagus cut into 1″ pieces
° 1 tbsp butter
° 1/2 tsp minced garlic

what you’ll do

- Prepare box mac to package specifications with the following exception:
° Add paprika, cayenne and mustard seeds to cheese mixture and prepare as normal
- Sautee asparagus in butter and garlic
- Stir asparagus into finished mac and serve with hot sauce

Sample Thursdays – Vegan Sandwiches Save the Day! and the Retro KFC-Style Sandwiches

* I’d been eyeing the Vegan Sandwiches Save the Day!: Revolutionary New Takes on Everyone’s Favorite Anytime Meal (whew!) cookbook for quite while. I’d seen photos around the internet that looked amazing. It wasn’t really a hard sell for me, to be honest. I love sandwiches and I like learning new ways to veganize my old favorites and if that sounds anything like you this is a book to get, no joke.

I’ve tested a number of the recipes so far and this one (shown below) is one of my favorites so far. That said, everything in here is amazing. I think of all the vegan cookbooks I’ve purchased so far this is both the least expensive and the most used. The authors, Tamasin Noyes and Celine Steen, clearly understand how and what people are looking for when it comes to the gourmet sandwich.

I have read several reviews offering a level of frustration with the recipes here, but if you read the book these ladies clearly state that the awesome thing about making sandwiches is you can make it as quick and simple or as involved and time consuming as you want. If you want to make the bread from the recipes they have? Do it! If you don’t want to take the time to make your own bread? Don’t do it! You get out of this what you invest, but more than that, even if you don’t want to spend three hours baking breads (which I actually did do- and they are simple and spectacular) you are still left with a greater knowledge of how to prepare fun meals for all occasions and for all types of eaters.

I made this “Retro KFC-Style” sandwich (pg. 95) without actually thinking it would end up like the “real thing” (let me say at this point that I absolutely hate when people say something is the “real thing”, I don’t even know what that means), but man oh man did it hit the spot! The seitan was crispy, the sauce had a nice bite, and though I’m not usually a fan of white buns it was reminiscent of that “fast (junk) food” feel. The recipe calls for shredded lettuce, which would have made it a little more KFC like, but I prefer green lettuce (not iceberg) and left it as a whole leaf. Overall I 5-star this recipe.

I am going to make/photograph a few more of the recipes throughout so you can see just how amazing they are, but starting now I am recommending you pick this up (and for only $10 how can you say no?).

Tasty Tuesday – 2013′s eats continue!

* I ate out a lot this week. And when I wasn’t eating out I was cooking loads of collard greens (Jason says they remind him of his childhood). Oddly I stayed pretty healthy, made good choices and feel pretty good. I’ve got the collards as an upcoming recipe, other than that Taco Bus and Chiptole won me over this third week in January. Enjoy!
